Happy Father’s Day!!

I know it's a little late but I was practically in the kitchen all day long! My hubby wanted nothing but food for Father's Day and as a good wife, I obliged. ;) I made my famous Ham, Chorizo and potato frittata for brunch and like the first time, it was delicious!  We were home all day so we kind of just chilled out and watched movies and our recorded shows. Lunch was whatever we found in the fridge.  Call me lazy but I didn't' feel like making all three meals today.  :) Dinner was … [Read more...]

Planning For Our Thanksgiving Feast

Hey everyone. You know this is the very first year I have not one item for our Thanksgiving feast? Usually I have some of the Thanksgiving essentials weeks before but this year is different. I'm too busy.  I'm too tired. And I'm too "unscheduled" (is that even a word? lol) as of yet.  I haven't found the right balance of working, blogging and motherhood but I'm hopeful. I know I will soon find it. But right now it's time for me to get down and dirty and figure out what our … [Read more...]

Tuesday Thirteen: 13 “More” Things About Me

A few months ago I posted about facts about me so this is kind of a continuation of the first one. Also, if you're a blogger, you may have noticed that I wrote "Tuesday Thirteen." Bloggers know it should be Thursday but I never got to posting this LAST week so enjoy. LOL **************************** 1.  I consider myself a very neutral person, but if you have issues with rules I have for my kids, then I have a problem with that.  My motto is "My kids, my rules." It's nothing against the … [Read more...]

EASY & Healthy Recipe: Korean Cucumber Salad (Oinamul)

I know I said I was a picky eater not liking vegetables and all but I do have to add that I love cucumbers. It's refreshing, low in calories, contains fiber and has vitamin C. Talk about a good thing.  I love it in salads and in sandwiches too.  Surprisingly my 12 year old enjoys it like she enjoys an apple. Plain with nothing on it. I came across a recipe in the Diabetes Health magazine in my doctor's (endocrinologist - I have Thyroid issues) office a few days ago.  Since my mom has … [Read more...]

Easy Recipe: Latina-Style 5-Ingredient Pasta & Chicken

Happy Sabroso (Tasty) Saturday everyone! (Sabroso Saturday was created by Ms. Latina as a blog hop where everyone can join in on the fun and bloggers can post their favorite recipes on the web.) This past week, my husband and I got in the kitchen (yes, we cook together sometimes without killing each other!;)) trying to decide what to cook for dinner. I tend to cook the same thing over and over; rice, beans and meat or fish but sometimes it can get tiresome and boring, just ask my … [Read more...]

My Day At The Hudson Valley Garlic Festival

Today I took my girls to the Hudson Valley Garlic Festival in Saugerties, New York. It was a beautiful day to walk around in the fresh air that was infused by garlic everywhere. I don't know about you but I am in love with garlic. I add garlic to almost every meal. If you know me and have had the chance to be THISCLOSE to me ;), chances are I probably smell like a garlic clove, which is ok by me.  Garlic is good stuff.  It's good for the body (lowers your cholesterol, regulates your blood … [Read more...]

Did Anyone Guess Right….

on my WW post? This post was fun even though I only got a few answers. Unfortunately no one was right. Rachel said it was jam.  Yona thought it had some avocado in it.  Tracey hoped for pesto and Michele thought it was colored sugar. So, are you ready to find out what the "Green Goodness" was? It was homemade GARLIC PASTE!! Somehow the garlic turned green when my husband added a touch of vinegar into the mixture of garlic, a dash of salt, oregano and butter after putting it in the … [Read more...]
