Easy Recipe: Bacalao Guisado (Codfish Stew) #SabrosoSaturday

Ash Wednesday was just a few days ago so that means every Friday until (Lent) Easter, I will be eating meat-less meals with my family.  I don't know about you but I LOVE seafood. If I could afford it, I would eat it at least 3 times a week. From shrimp, flounder, crabs, tilapia, salmon - you name it. My most favorite fish is salted codfish (bacalao), which by the way is relatively inexpensive.  I remember when I was a little girl I would eat seconds when my mother would make it.  She would … [Read more...]

Easy Recipe: Cinnamon Roll Pancakes (Sabroso Saturday)

I love breakfast foods but when it comes to making breakfast, I rather stay in my warm, cozy bed until my back tells me to get out of bed.  Usually my husband takes over the breakfast-making duty on the weekends since I make him breakfast and lunch during the week.  For me, it's a win-win situation.  The weekend is my time to sleep in so the last thing I want to do is to wake up early and start cooking in the kitchen. No way, not me.  Give me my coffee and let me be for a couple of hours. Is … [Read more...]

Easy Recipe: Pique (Puerto Rican Hot Sauce)

I remember when I was a little girl, my father would always add Pique (Puerto Rican Hot Sauce) to his rice and beans.  He said the heat of the Pique would enhance the flavor of the beans and give it a spicy kick.  As a little girl, I could not stand the heat, it was way too spicy for me but now that I'm older, I love spicy foods.  I especially love eating beans spiced with a dash or two of Pique just like Papi (Dad).  My son, who's 14, has been adding Pique to his foods since he was about 5 or 6 … [Read more...]

Easy Recipe: Red Velvet Cupcakes With Cream Cheese Frosting (Courtesy of Paula Deen)

What is the color of Valentine's Day? Red, right? Red signifies passion and love. It's also the most popular color for roses during Valentine's Day too. It's another way to say "I love you" to that special someone. For this week's Sabroso Saturday, I chose a well-known recipe from Paula Deen for Red Velvet Cupcakes. She's a true Southerner and her recipes are delicious.  If you haven't tried Red Velvet cake, it's scrumptious. It has a slight note of chocolate throughout and it's very … [Read more...]

Easy Recipe: Latina-Style 5-Ingredient Pasta & Chicken

Happy Sabroso (Tasty) Saturday everyone! (Sabroso Saturday was created by Ms. Latina as a blog hop where everyone can join in on the fun and bloggers can post their favorite recipes on the web.) This past week, my husband and I got in the kitchen (yes, we cook together sometimes without killing each other!;)) trying to decide what to cook for dinner. I tend to cook the same thing over and over; rice, beans and meat or fish but sometimes it can get tiresome and boring, just ask my … [Read more...]

Easy Recipe: Twice-Baked Potato Bites (Sabroso Saturday)

I recently wrote about I Can't Believe It's Not Butter (ICBINB) and how healthy it is compared to regular butter and oils. Since then, I have cooked many meals with ICBINB and I love it. My family and I are hooked!  It's taste delicious, it's creamy and it's low in fat.   My favorite quick and easy recipe is to spread ICBINB onto warm toast and dash a little cinnamon on top with a cup of coffee and a piece of fruit like an apple or a pear. The combination pairs wonderfully for a fast and easy … [Read more...]

Easy Recipe: Puerto Rican-Styled Pepper Steak

Thank goodness the holidays are over and done with.  Aren't you glad? I'm so over Christmas, the tree, the lights, the food (well almost) and all the gifts.  All the hoopla is now gone from my system.  Now it's time to concentrate on something I haven't done in a few weeks and that is to post my succulent recipes. I know you all have been waiting. ;) Last night I made one of my family's favorite dish -- Puerto Rican-Styled Pepper Steak.  It's an easy recipe that I created with the help of my … [Read more...]

Easy Recipe: Festive Snickerdoodle Cookie & Cocktail Recipe

Cinnamon is one of my favorite spices of all.  If it contains cinnamon, I'll try it.  I add cinnamon to almost anything with sugar. I add it to my coffee, pancake batter, teas, cornbread, cakes, ice cream and even hot chocolate.  The smell is divine and so is the color. You know my living room walls were painted a cinnamon color because the name of the color was, you guess it, cinnamon.  My husband says I'm obsessed but it's ok. I can live with that. At least its good for you. ;) I found … [Read more...]

Easy Recipe: Bistec Encebollado (Steak & Onions)

I remember visiting my grandparents every weekend when I was a little girl.  I was always filled with excitement when I knew we were going over.  My grandparents were my parent the first 3 months of my life because my mother got very sick after she had me.  I guess you can say that is the reason why I had a special bond with them -- not because they are my grandparents. My abuelo (grandfather) was the chef of the house.  He would always create the tastiest meals ever.  Everyone would come … [Read more...]

Easy Recipe: Guineos En Escabeche (Sabroso Saturday)

When I was pregnant with my son, I didn't get too many cravings but when I did, let me tell you, they were very strong. They were so strong that it was all I thought about. I wasn't that "crazy" pregnant woman that would send her husband to the store at 3 in the morning to get chocolate or whatever the craving was. I was patient, in a way.  I did drink milk every single day because that was one of the things I craved and it was not because it was good for me or the baby. The one thing that … [Read more...]
