{Easy Recipe} Puerto Rican Turkey Hash

Hey everyone! It's been awhile since I posted one of my recipes here on the blog so here it goes.  It's a good one people! ;) Today I had planned on making a pasta dish with ground turkey but as soon as I got home, I really didn't feel like eating anything with pasta.  Instead, I came home wanting a delicious plate of rice and beans with a good seasoned meat dish but all I had on hand was a pound of ground turkey. I asked myself, "What can I make with ground turkey that would go well … [Read more...]

Easy Recipe: Dark Chocolate Banana Bread

It's not officially fall just yet but it sure does feel like fall already. The morning hours are crisp and cold and everyone is breaking out their sweaters and long pants. Once the kids are back in school, I often go into baking mode. I love to bake. It's soothing and it makes the house smell yummy. Every year, around this time, I make a delicious, moist pumpkin bread that my family and I go crazy over. I haven't made it just yet because I have been obsessed with banana bread with dark … [Read more...]

EASY Recipe: SouthWestern Pulled Pork & Roasted Potato Medallions (Courtesy of Target)

Several months ago, I went to an event that was sponsored by Target showcasing various products by Giada De Laurentiis in addition to Archer Farms items, sold exclusively by Target. At the event, I found numerous products that I would buy for my family and for any get-together in my home.  I tried out some really good foods such as Bacon Cheeseburger Pizzas, Apple Streusel Pancakes and Linguine with Sun-Dried Tomatoes, Olives & Lemon but the one food that stood out to me were the … [Read more...]

Happy Father’s Day…with a Ham, Chorizo and Potato Frittata

First of all I wanted to say Happy Father's Day to my dad, who is in heaven. I miss you dearly and never a day goes by without the thought of you. I love you Papi. Happy father's Day to my husband, the father of our children -- who loves us unconditionally and is always there for us.  He fixes everything and anything in our house to make it look presentable.  He does laundry, makes the BEST breakfast on the weekends and cooks dinner from time to time.  He is the go-to person when we need to … [Read more...]

Easy Recipe: Bobby Flay’s Miami Turkey Cuban Sandwich

[Read my Hellmann's recap with Bobby Flay at La.Venue in New York City.] If you ever tasted and savored a real Cubano (Cuban) sandwich, then you know the real deal. It's a sandwich made with roasted pork, ham, Swiss cheese, pickles, mustard, and depending when you get it, sometimes salami on warm Cuban bread. I love my Cubano to be heavy on the roast pork with some mojo (garlic sauce).  You can't go wrong with garlic on anything! Well besides sweets like cakes and cookies. ;) After … [Read more...]

EASY & Healthy Recipe: Korean Cucumber Salad (Oinamul)

I know I said I was a picky eater not liking vegetables and all but I do have to add that I love cucumbers. It's refreshing, low in calories, contains fiber and has vitamin C. Talk about a good thing.  I love it in salads and in sandwiches too.  Surprisingly my 12 year old enjoys it like she enjoys an apple. Plain with nothing on it. I came across a recipe in the Diabetes Health magazine in my doctor's (endocrinologist - I have Thyroid issues) office a few days ago.  Since my mom has … [Read more...]

Easy Recipe: Bacalao Guisado (Codfish Stew) #SabrosoSaturday

Ash Wednesday was just a few days ago so that means every Friday until (Lent) Easter, I will be eating meat-less meals with my family.  I don't know about you but I LOVE seafood. If I could afford it, I would eat it at least 3 times a week. From shrimp, flounder, crabs, tilapia, salmon - you name it. My most favorite fish is salted codfish (bacalao), which by the way is relatively inexpensive.  I remember when I was a little girl I would eat seconds when my mother would make it.  She would … [Read more...]

Easy Recipe: Cinnamon Roll Pancakes (Sabroso Saturday)

I love breakfast foods but when it comes to making breakfast, I rather stay in my warm, cozy bed until my back tells me to get out of bed.  Usually my husband takes over the breakfast-making duty on the weekends since I make him breakfast and lunch during the week.  For me, it's a win-win situation.  The weekend is my time to sleep in so the last thing I want to do is to wake up early and start cooking in the kitchen. No way, not me.  Give me my coffee and let me be for a couple of hours. Is … [Read more...]
