Easy Recipe: Bacalao Guisado (Codfish Stew) #SabrosoSaturday

Ash Wednesday was just a few days ago so that means every Friday until (Lent) Easter, I will be eating meat-less meals with my family.  I don't know about you but I LOVE seafood. If I could afford it, I would eat it at least 3 times a week. From shrimp, flounder, crabs, tilapia, salmon - you name it. My most favorite fish is salted codfish (bacalao), which by the way is relatively inexpensive.  I remember when I was a little girl I would eat seconds when my mother would make it.  She would … [Read more...]

A Short Story: Happy Birthday To My Little Souvenir

Two birthdays this week has got me crazy busy getting things just right for my little girls. After six years, I still can't believe I have 2 kids with birthdays that are only three days apart.  And to think my doctor wanted my little souvenir to be born on March 7th. Was he insane?  We have a daughter who's birthday falls on March 7th so choosing our baby's birthday was not easy. You may be asking why would we choose our daughter's birthday? Well since I had major complications with my first … [Read more...]

A Short Story: Happy Birthday To My First Daughter.

Twelve year ago, in Yonkers NY, I went into labor with my second child.  It was after dinner when I started feeling cramps and at that moment, I knew right away what that meant. So I called my doctor and he told me to come to the hospital.  When my husband and I got to the hospital (St. Johns Riverside Hospital), they checked me in and gave me a room and a robe.  They connected me with the fetal monitors and all that jazz around my belly and checked to see if I was dilated. Nurses said it … [Read more...]

Changes For The #DisneySMMoms Conference

Next week, I will be in Orlando for my second blog conference, the Disney Social Media Moms Conference.  I'll be in Orlando for 4 days and I'm so excited to go.  Since I started blogging, I have only been to one conference which is BlogHer 10' and it was awesome. A bit overwhelming but I learned a lot.  I'm so ready to network, meet other bloggers and spend some time at the greatest place on earth, Walt Disney World. Unfortunately things have changed since my last post about the conference. … [Read more...]

Easy Recipe: Cinnamon Roll Pancakes (Sabroso Saturday)

I love breakfast foods but when it comes to making breakfast, I rather stay in my warm, cozy bed until my back tells me to get out of bed.  Usually my husband takes over the breakfast-making duty on the weekends since I make him breakfast and lunch during the week.  For me, it's a win-win situation.  The weekend is my time to sleep in so the last thing I want to do is to wake up early and start cooking in the kitchen. No way, not me.  Give me my coffee and let me be for a couple of hours. Is … [Read more...]

Ramblings: Not Me.

There are people who are natural-born teachers, not me. There are people who love exercising, not me. There are people who love iced coffee, not me. There are people who love to speak in front of a crowd, not me. There are people who crave attention - good or bad, not me. There are people who think they're always right (well me too. Lol just kidding), Not me! There are people who put their kids on a pedestal in an annoying way, not me. There are people who will express their … [Read more...]

Wordless Wednesday – My Daughter is TERRIFIED of This.

I was on my way to my favorite coffee shop (no, it's not Starbucks) and I glanced at a comic book store window and saw Mr. ET himself in a robe! He looked so cute but according to my five year old, he's spooky. Do you think he's spooky? Enjoy! Happy Wednesday! Don't forget to link up your post at the bottom of the picture!! … [Read more...]

Cooking Connections Highlights: Healthier Meal Makeovers

Last Wednesday I participated in something I have never done before. I was a co-host of a live web cooking class!  The class was called Healthier Meal Makeovers and many people shared their tips on how they feed their families healthy foods. We all shared one or more recipes, tricks and tips on everything healthy and "good for you" foods.  One of the recipes I shared was the 2-recipe low-fat chocolate cake. I posted before as one of the easiest recipes to make -- and it is!.  In fact, I made … [Read more...]
