I know I said I was a picky eater not liking vegetables and all but I do have to add that I love cucumbers. It's refreshing, low in calories, contains fiber and has vitamin C. Talk about a good thing. I love it in salads and in sandwiches too. Surprisingly my 12 year old enjoys it like she enjoys an apple. Plain with nothing on it. I came across a recipe in the Diabetes Health magazine in my doctor's (endocrinologist - I have Thyroid issues) office a few days ago. Since my mom has … [Read more...]
The EASIEST Way To Hide Veggies in Foods For Kids
I'm not a proud mama when I say I have two very picky kids when it comes to trying out new foods and veggies. I'm not proud because they are just like their mom. I'm so picky when it comes to veggies because I grew up not liking anything that was green. When it came to fruits, I liked almost all fruits so that's what my mother bought for me instead. I recently came across an article in the April edition of Redbook magazine that I immediately loved, I just had to share it with my lovely … [Read more...]

Shout-Out Sunday – 4/3
Whoa, it's been a long while since I last posted a Shout-Out Sunday. It's not that I haven't found any good, interesting reads (I most definitely have), it's just that other things have gone in the way like life, kids, my darling husband. You know how that goes. Last night I was chatting with my good friend and fellow blogger Rachel and she asked me what happened to my Shout-Out Sunday post. I thought no one cared about that post but I guess I was wrong. And I'm grateful for her asking me … [Read more...]

Wordless Wednesday: Future Bloggers via Video #DisneySMMoms (linky)
It's going to take me a few more days to recover from one of the best experiences in my blogging life - the Disney Social Media Moms Conference. I got home this past Sunday exhausted but very happy to have been one of the couple hundred bloggers who attended this amazing conference. It was my first Disney conference and hopefully it won't be my last. I had a blast and I learned A LOT! Loved seeing old friends and absolutely loved meeting new friends. Wordless Wednesday – Disney Past (Circa 1994 & 2002)
As I take a much needed break, I thought about the Wordless Wednesday I wanted to post last night! I totally forgot. I've been running around like a chicken with no head or neck trying to get things packed and ready. It's my first time traveling with my daughter and I hope I don't forget anything. Wish me luck! This week's Wordless Wednesday is from Walt Disney World back in 94' and 02'. The first and last time I've been to Disney. As some of you already know, I'm attending the Disney … [Read more...]
Easy Recipe: Bacalao Guisado (Codfish Stew) #SabrosoSaturday
Ash Wednesday was just a few days ago so that means every Friday until (Lent) Easter, I will be eating meat-less meals with my family. I don't know about you but I LOVE seafood. If I could afford it, I would eat it at least 3 times a week. From shrimp, flounder, crabs, tilapia, salmon - you name it. My most favorite fish is salted codfish (bacalao), which by the way is relatively inexpensive. I remember when I was a little girl I would eat seconds when my mother would make it. She would … [Read more...]
