The EASIEST Way To Hide Veggies in Foods For Kids

I’m not a proud mama when I say I have two very picky kids when it comes to trying out new foods and veggies. I’m not proud because they are just like their mom. I’m so picky when it comes to veggies because I grew up not liking anything that was green. When it came to fruits, I liked almost all fruits so that’s what my mother bought for me instead.

I recently came across an article in the April edition of Redbook magazine that I immediately loved, I just had to share it with my lovely readers. All you need is a food processor and some fruits and veggies.

Purple Puree

Use it in place of:

1. Brownies: Substitute the half the oil the recipe calls for.
2. Taco Meat: Add 1/2 cup per pound of beef.
3. Burgers: Use 1/4 cup per pound of meat

Here’s what you need:

6 Cups of Raw baby Spinach
1-tsp of lemon juice
3 Cups fresh/frozen blueberries (slightly thawed)

Puree all ingredients with2 Tbsp of water in a food processor until smooth. If necessary, add another 1 to 2 Tbsp of water for a smoother consistency.

Orange Puree

Use it in place of:

1. Banana Bread: Substitute for half the oil or butter the recipe calls for.
2. Mac & Cheese: Add up to 1/4 cup to a box of prepared mac and cheese.

Here’s what you need:

1 Sweet Potato, peeled & chopped.
3 Large Carrots, peeled and sliced into chunks.

In a medium pot, cover potatoes and carrots with water and boil for about 20 minutes, until very tender. Drain and place in a food processor with 2 Tbsp of water. Puree on high until smooth.

Green Puree

Use it in place of:

1. Guacamole: Use in place of 1/3 of the avocado
2. Lasagna: Substitute for 1/3 of the sauce with puree.
3. Chili: Stir in 1/2 cup per batch.

Here’s what you need:

2 Cups of Broccoli Florets – fresh or frozen
2 Cups of Raw baby Spinach
1 Cup of Frozen Sweet Peas

Steam broccoli and spinach in a steamer over 2 inches of water, about 10 minutes or until very tender. Add peas for the last two minutes. Drain; place in food processor with 2 Tbsp water. Puree on high until smooth.

White Puree

Use it in place of:

1. Coffee Cake, muffins, or chocolate chip cookies: Substitute for half the butter the recipe calls for.

Here’s what you need:

2 (15oz) Cans of White beans such as Northern Navy or Cannellini beans.

Rinse and drain beans; place in a food processor. Puree with 2 Tbsp of water until you get a smooth (not wet) puree – the consistency of peanut butter. If necessary, think with 1 tbsp of water.
