{Easy Recipe} Puerto Rican Styled Gluten-Free Turkey Meatballs

I can honestly say that I am overly obsessed with cooking shows. Whether it’s from the Cooking Channel, Food Network or even YouTube, I can watch food shows all day, everyday. I love to watch people cook. It relaxes me and it justs puts me in a zen mood.  I even have a few chefs that I can watch all day long too. They include: Bobby Flay, Giada De Laurentiis, Melissa D’Arabian, Ina Garten, The Pioneer Woman and so much more!

The only shows I dislike are those food challenge shows. Now those I can live without. I have no interest in them at all.  If you ask me, they should have a channel dedicated to those unnecessary shows so I can avoid them at all costs.

But I digress..

One day I decided to make meatballs but I wanted low-fat, healthy meatballs made with gluten-free bread crumbs becuase of my thyroid condition.  So I made this recipe on a whim and trust me when I say this,  these meatballs are DELISH!! (photo below!)

I’ve been waiting a long time to share my beloved turkey meatball recipe with you all because it’s to die for. It’s so delicious, rich and I’m sure it’s low-in-fat as well.

The recipe is easy but just know I do not measure anything. I go willy-nilly on most of my recipes so trust your instinct when adding the ingredients. If, by any means, you are stuck; do not hesitate to contact me with any questions or concerns. 😉

Puerto Rican Styled Gluten-Free Turkey Meatballs

Ingredients

1 pound of ground turkey (not white meat – it would be too dry)
Minced yellow onion (half of a small onion is plenty)
2-3 crushed garlic cloves
1 packet of Sazon con culantro
Adobo with pepper (to taste)
Garlic Powder
Onion Powder
Black Pepper
Dried or Fresh minced Parsley ( a little)
Ketchup (a squirt or two)
1 teaspoon of sofrito
Gluten-Free Bread Crumbs (maybe 1/4 cup?)
1 Large Egg

Directions

Preheat oven to 350 degrees. Place turkey meat in a large bowl and pour ingredients over the meat. Mix well but too much. You don’t want tough meatballs. Form the meat into meatballs and placed them on a cookie sheet lined with parchment paper. Bake for 20-25 minutes. Serve them in a pasta sauce over whatever pasta you like & enjoy!
