MVP #GenerationGo: My Favorite Kid-Friendly Recipe (& a $50 VISA Gift card Giveaway!)

As a MVP Generation Go Ambassador and a mom of three, there’s a bunch of healthy recipes that I enjoy making for my family but I’ll share one that is very special.  This week’s topic is all about healthy recipes and getting your kids involved in eating healthy.

Having a daughter who is extremely picky, it’s often difficult to get her to eat healthy, especially any green vegetable.  So it’s up to me to “hide” the veggies until she gets accustomed to the taste.

If I left the food choices to her, it would definitely be pasta with butter, white rice and chicken nuggets with milk and cheese on the side.  What kind of menu is that? Not a healthy one, that’s for sure!

The one recipe we all love is the Green Apple Smoothie.  A few years ago, I found a green smoothie recipe that used broccoli and asparagus. Instead of adding both the asparagus and broccoli, I added fresh baby spinach leaves.  My daughter would never eat spinach leaves or anything green like I said before but since this is a Green “Apple” Smoothie (she loves apples!), she drinks it with no problem whatsoever.

Green Apple Smoothie

Ingredients:

  • 1 Banana, cut in chunks
  • 1 Granny Smith Apple, cored and chopped or sliced
  • 1 cup White or Green Grapes
  • 1 cup Fat-Free Vanilla Yogurt (or Plain Yogurt and ¼ teaspoon vanilla)
  • 1-2 cups fresh Baby Spinach Leaves
  • Splash of Apple Juice (optional)
  • Ice

Instructions:

  1. Place all ingredients in blender and blend until smooth
  2. Enjoy.

You see, getting kids to eat healthy is not that difficult at all. It’s sad that I have to hide veggies from my daughter but I’ve got to start somewhere.

  3. Honey Mustard Grilled Chicken
    In a shallow bowl, mix the mustard, honey, mayonnaise, and steak sauce. Set aside a small amount of the honey mustard sauce for basting, and dip the chicken into the remaining sauce to coat.
    Lightly oil the grill grate. Grill chicken over indirect heat for 18 to 20 minutes, turning occasionally, or until juices run clear. Baste occasionally with the reserved sauce during the last 10 minutes. Watch carefully to prevent burning!

One recipe my family has gone nuts over, which makes me happy since it’s both healthy and super easy to make, is spicy spaghetti squash (which has replaced carb- and calorie-heavy pasta as our go-to Italian dish). All you need to do is slice the squash lengthwise, place it upside down in about 1/2 cup water in a baking dish, and cook for about 45 mins at 375, then flip it it and cook for about 15 more mins. Then, after it’s cooled a bit, just scoop out the seeds and use a fork to pull off the “spaghetti” strands. For an easy sauce, we just saute our favorite herbs (basil, chives, parsley, salt, pepper, etc.) with some olive oil, toss in the spaghetti, and that’s all there is to it. Thanks!

  11. I make a healthy pasta sauce using minced zucchini, mushrooms, onions, carrots and any other veggies I can find, along with ground turkey. I cook everything up and pour jarred marinara sauce over it, and my toddler (and husband) never even notice that they are eating veggies! The key is to mince the veggies as finely as possible (you can even put them in a food processor). It’s a hit every time!

  19. We love Salad Bar night! We buy lots of types of lettuce, toppings, and dressings. It’s a great dinner and you can eat the leftovers for days!

  20. Roasted Garlic Lemon Broccoli
    Ingredients

    2 heads broccoli, separated into florets
    2 teaspoons extra-virgin olive oil
    1 teaspoon sea salt
    1/2 teaspoon ground black pepper
    1 clove garlic, minced
    1/2 teaspoon lemon juice

    Directions

    Preheat the oven to 400 degrees F (200 degrees C).
    In a large bowl, toss broccoli florets with the extra virgin olive oil, sea salt, pepper and garlic. Spread the broccoli out in an even layer on a baking sheet.
    Bake in the preheated oven until florets are tender enough to pierce the stems with a fork, 15 to 20 minutes. Remove and transfer to a serving platter. Squeeze lemon juice liberally over the broccoli before serving for a refreshing, tangy finish.

  23. I make soursop juice which is technically a smoothie, you can either freeze the soursop then put in a food processor or use the fresh one and add it to ice in a food processor. Make sure you remove the skin and seeds before mixing.

  27. My favorite family recipe that is healthy is one of my grandmother’s liquados. Bananas, strawberries, milk, honey an egg and some nutmeg all mixed in a blender until smooth. She was serving us these wayyyyyyyy before anyone ever heard of a smoothie. YUMMY.

  28. It would have to be Egg/Rice porridge. I just had it yesterday and it consists of rice porridge with egg mixed in and some herb flavoring. I really like it as well as the rest of my family

  29. my favorite summer recipe is a Pea Summer Salad.
    You mix 1 can of Peas, 1 head of lettuce, bacon bits, mayonnaise, green peppers and 2 boiled eggs (cut up) Stir up and put in fridge for 4 hours and then enjoy.

  30. My family loves Beans and Rice. Open a can of beans. Makes some long grain rice. Put the beans on top the rice!

  31. One of our favorite healthy meals is vegetarian chili, made with zucchini, tomatoes, corn, onions, garlic, beans (pinto, black or kidney) and spices.
