As a MVP Generation Go Ambassador and a mom of three, there’s a bunch of healthy recipes that I enjoy making for my family but I’ll share one that is very special. This week’s topic is all about healthy recipes and getting your kids involved in eating healthy.
Having a daughter who is extremely picky, it’s often difficult to get her to eat healthy, especially any green vegetable. So it’s up to me to “hide” the veggies until she gets accustomed to the taste.
If I left the food choices to her, it would definitely be pasta with butter, white rice and chicken nuggets with milk and cheese on the side. What kind of menu is that? Not a healthy one, that’s for sure!
The one recipe we all love is the Green Apple Smoothie. A few years ago, I found a green smoothie recipe that used broccoli and asparagus. Instead of adding both the asparagus and broccoli, I added fresh baby spinach leaves. My daughter would never eat spinach leaves or anything green like I said before but since this is a Green “Apple” Smoothie (she loves apples!), she drinks it with no problem whatsoever.
Green Apple Smoothie
Ingredients:
- 1 Banana, cut in chunks
- 1 Granny Smith Apple, cored and chopped or sliced
- 1 cup White or Green Grapes
- 1 cup Fat-Free Vanilla Yogurt (or Plain Yogurt and ¼ teaspoon vanilla)
- 1-2 cups fresh Baby Spinach Leaves
- Splash of Apple Juice (optional)
- Ice
Instructions:
- Place all ingredients in blender and blend until smooth
- Enjoy.
You see, getting kids to eat healthy is not that difficult at all. It’s sad that I have to hide veggies from my daughter but I’ve got to start somewhere.

It’s funny you posted about smoothies. One of the healthy summer recipes my husband makes is a smoothie with strawberries and peanut butter. It’s very nutritious!

Our favorite healthy recipe is stir fry!
I cut up all the veggies that the kids pick out (to get them to actually eat veggies I have them pick the out) throw it in a pan with some cubed chicken and the older one helps me stir. It’s good bonding time, and tricks them into eating veggies. Win win!

One of my family’s fave healthy recipes, is grilled veggies! We LOVE veggies..If it’s not good weather out to grill, we roast them in the oven which is just as good lol
Asparagus, zucchini, squash, onions, mushrooms, bellpeppers..etc.

Even in this heat, it’s easy to whip up a delicious batch of smoothies for the gang. Usually, I just throw some orange juice, some frozen bananas, strawberries, blueberries, and maybe a couple other things we might have laying around into the blender with some ice. Then, whirrrrrr, and it’s snack time!

I always try to hide vegetables in all foods I cook. For example I use canned pumpkin in a lot of recipes (muffins, pancakes), pureed beans in meatloaf and hamburgers, and broccoli and spinach in brownies. My family thinks they are eating yummies, but really, they are getting servings of vegetables.
