Easy Recipe: Healthy Tuna Fish Sandwich (Sabroso Saturday)

After seeing Go Red Por Tu Corazon on TV last week, I have to be honest and say I’ve set my mind to eating right and cooking healthy for my family.  I don’t want to have heart disease at an early age and I certainly don’t want my family to suffer from that either.

I was so happy when I was invited to an event about making one night a week a sandwich night with the Deen Brothers from the Food Network.  I chose the Tuna Fish Sandwich from the event because it is tasty, healthy and very easy to make.  I’m all about easy being that I have 3 kids and a very hungry husband. 😉 I hope you enjoy it.

Tuna Fish Salad Sandwich

Ingredients

8 slices whole wheat bread
2 (6 oz.) cans light tuna packed in olive oil, drained
1/3 cup mayonnaise, more or less depending on preference
zest and juice of 1 lemon
4 eggs, hard boiled and finely chopped
1/4 cup chopped dill pickles
1 tablespoon minced onion
1/2 teaspoon lemon pepper
salt to taste
4 leaves green leaf lettuce, chopped
8 slices tomato, thinly sliced

Instructions:

In a medium mixing bowl, whisk together mayonnaise, lemon zest and lemon juice. Add tuna, eggs, pickles, minced onion and lemon pepper and stir to coat. Add additional mayonnaise if needed. Salt to taste.
Divide tuna salad among 4 slices of bread. Top each with chopped lettuce and tomato slices. Top with remaining 4 slices of bread and serve.

  3. I love tunafish! I make a tunafish salad that I eat over white rice. Tunafish is great and healthy meal.

  4. I love tuna fish salad but never could make a great version at home. This recipe looks so good. I will definitely need to have a tuna fish sandwich this week!

    • I like tuna fish sandwiches simple sometimes too. I add a bit of garlic & onion powder, add a tablespoon of seasoned Italian breadcrumbs and pepper and it’s so good.
