Extra-Virgin Olive Oil has been a staple in my kitchen (and my mom’s) for many years. Growing up, my mom used to serve the family boiled potatoes, meat (such as chicken or pork), a side of veggies and EVOO (extra virgin olive oil) to pour over the potatoes. It is so delicious. It’s still one of my favorites meals today as an adult.
Olive oil, as you know, has many health benefits. First of all, it’s heart healthy – it won’t clog up your arteries, it has vitamin E and it’s full of antioxidants, it raises your HDL (the good cholesterol) and it tastes really good. It’s so rich and decadent unlike regular olive oil which has a lighter flavor. I like bold flavor so I always opt for extra-virgin.
There are 3 types of olive oils. Here are the differences:
Extra Virgin – considered the best, least processed, comprising the oil from the first pressing of the olives (best used for salads, marinades & veggies).
Pure – undergoes some processing, such as filtering and refining (best used for sautés & stir-fries).
Light – undergoes considerable processing and only retains a very mild olive flavor (best used for sautéing and/or frying chicken & roasted veggies).
Crisco was kind enough to send me over a basket full of goodies. It contained four varieties of Crisco oil (EVOO, Olive Oil, Light Olive Oil & Omega-3 oil), a rubber spatula, a nice Crisco apron, a recipe book and coupons for Crisco oils. I couldn’t wait to start cooking with my new apron, oils and spatula when I received the basket. It was like a dream. I have to be honest, I never owned an apron. What I have are “cooking shirts”. They are shirts I “use” to cook with because there are stains all over so seeing the apron was definitely a special treat for me and my nice clothes. Hey, don’t laugh at my cooking shirt! lol

I cook primarily with Olive oil or vegetable oil. It depends on what type of cuisine I am preparing. Anything Indian will get vegetable oil. Things that are pan fried or any Spanish style dishes are cooked with olive oil.

I like to use Canola oil because i think it burns cleanly, no smoke.

I use peanut oil whenever possible because of the delicious taste it gives to foods like fried shrimp, although you have to be careful not to get it too hot so that it smokes and burns.
