I have three tips I would like to share: When you roast a whole chicken, freeze the whole carcass (after you are done carving the meat out) in a large freezer Ziploc gallon size bag and save it for another dinner - Soup. You can also boil the carcass with onions, celery, carrots, parsnips, salt, pepper and herbs for at least 4 hours to make a stock.
