Easy Recipe: Italian Pasta Salad (Sabroso Saturday)

Sometimes cooking can be therapeutic for me, depending on my mood.   There are times when I love to cook and there are times when I dread to face the kitchen.  Especially when my mind goes blank when I think about what to make.  But once everything is planned and prepped, I’m ready to go and create a tasty meal.

When it comes to simple side dishes, I’m super happy to make it because I know it won’t take long to make.

The recipe that is featured today is easy, light and very versatile. You can add your favorite ingredients and make it your own or you can just leave it as-is.  I hope you enjoy it.

ITALIAN PASTA SALAD

Ingredients

1. Bottle of Italian Salad Dressing
2. A box of Tri-color Rotini pasta
3. Red Onion
4. Seedless cucumber
5. One Carrot
6. Pepperoni (or any meat you like. You can even omit this if you’re a vegetarian)

*You can change up the recipe by adding or omitting any of the ingredients in the recipe.

Directions

Follow the directions in the back of the pasta box.  After the pasta is cooked, drain it and run cold water over the pasta to cool it.  Place the pasta in a large bowl. Slice the onions and cucumbers thinly. Shred the carrot.  Cut the pepperoni slices in half.  Dump all the ingredients on top of the pasta and add about half of the bottle of Italian dressing (more or less – depending on your taste).  Mix it all together and refrigerate for a coupe of hours so the flavors can marinate together.

Voilà!

That’s it! Easy peasy and tasty too!

My whole family loves this, except my five year old. I’m still trying to “train” her. 😉
