I saw this recipe being made right before my eyes at a Hellmann’s event this past week (full event post coming up) made by Iron Chef Bobby Flay with the help of Lori Loughlin (Becky from Full House). It was one of my favorite recipes that they made because not only was it easy to make, but it is healthy and very tasty.
I’m one who is very picky when it comes to veggies (yes, I know, that is bad!) but with this recipe, I found out that I love fresh spinach. Who would’ve thought! I never liked cooked spinach and never thought of eating spinach instead of lettuce in a sandwich but this recipe has changed me for the better. I just hope I can change my kid’s taste buds too.
Chicken or Turkey Gyros
Serves: 4
Prep Time: 15 Minute(s)
Chill Time: 30 Minute(s)
Ingredients:
1/4 cup coarsely grated seedless cucumber
3/4 cup Hellmann’s® or Best Foods® Light Mayonnaise
2 cloves garlic, finely chopped
1 Tbsp. fresh lemon juice
1 tsp. fresh grated lemon peel
4 whole wheat pita breads, split
Fresh spinach leaves, rinsed and patted dry
8 cherry tomatoes, halved
1 lb. sliced rotisserie or grilled chicken or turkey
Instructions:
1. Place grated cucumber on paper towel and gently squeeze dry. (Do not skip this step or you will have a watery dressing.) Combine drained cucumbers, Hellmann’s® or Best Foods® Real Mayonnaise garlic, lemon juice and peel in small bowl. Season, if desired, with salt and black pepper. Cover and refrigerate at least 30 minutes.
2. Spread a few tablespoons dressing inside each pita; add spinach leaves, tomatoes and chicken, then drizzle with additional dressing.

This recipes remind me of the Gyros that I would get in a local deli in Brooklyn. Fresh ingredients and really flavorful. I will be trying it with my family. Thanks.

I could eat these every day. Great recipe and a great way to use leftover chicken. I always have leftover chicken!
If you like all the ingredients (& even if you don’t –I don’t like spinach but raw spinach is good thx to this recipe), you will love the combination. They all work well together. You also get a little spice from the fresh garlic.. Divine!!

I love gyros! We had some chicken gyros this weekend. I load them with salad, low fat cheese and sometimes smashed beans (SHHH!) and the boys enjoy them better a hamburger.
